Hej! It is Elsa here, writing from my kitchen in beautiful Småland. Today, I am so excited to share a recipe that feels like a ray of sunshine on a plate: my citronkladdkaka med maräng. There is nothing quite like the Swedish fika tradition, and this cake combines the sticky, gooey texture we all love with the fresh zing of lemon curd and a fluffy cloud of sweet meringue. It is a recipe close to my heart, perfect for brightening up dark winter afternoons or celebrating the return of spring in the garden.
While many of us are used to the dark richness of chocolate cakes, sometimes you need a fresh alternative. Sätt ugnen på 175°C.
Smörj en form med löstagbar kant, ca 22 cm i diameter, med smör eller spänn fast ett bakplåtspapper i botten.
Smält smöret i en kastrull och ta av från plattan.
Rör ner lemon curd, strösocker, salt och ett ägg i taget i det smälta smöret. Rör slutligen ner vetemjölet och den färskpressade citronjuicen i smeten.
Häll smeten i formen och grädda kakan mitt i ugnen i ca 14 minuter.
Gör marängen: Vispa äggvitorna till ett fast skum med elvisp. Tillsätt sockret, lite i taget, under fortsatt vispning tills du har en blank maräng med styva toppar.
Ta ut kakan, toppa den med marängen och grädda i ytterligare 16 minuter mitt i ugnen. Ta ut och låt svalna helt innan du lossar kanten på formen.
